Dad's Homefries 

These potatoes are always a hit! My daddy taught me how to make these! I switched up the recipe a bit due to my "Food Network Cooking School Training." I use red potatoes instead of white and one day when I get really fancy, I am going to use some fresh herbs too! 

Boil red potatoes until soft, but firm in the middle- drain water. Cut potatoes in fours. Bring a pot with olive oil coating the bottom to high heat. Chop onions and green peppers in the meantime. Throw the potatoes in first. Season with salt, pepper and seasoning salt. Brown the potatoes all around. Once they are toasty, add the veggies and 1/4 stick of butter. Cook until the veggies and potatoes are soft. Eat up and enjoy with sour cream if you like!
