Flying Frittata


A combination of eggs, cream, cheddar cheese, feta cheese, peppers- red, yellow and green, onion and mushrooms made into a pancake!


This recipe requires lots of veggie chopping. Then crack those eggs an mix with 2 tablespoons of heavy cream, at least 6 large ones! 1/2 cup of shredded cheese, sprinklings of crumbled feta. 


All of the veggies should be cooked first. They should be cooked on medium heat until soft. Add the beaten egg/cream mixture to the pan. Swirl the egg around until it becomes solid. The edges should start to peel. There will be a slight runny consistency in the middle until your fritatta flies! 


Take a spatula and loosen the frittata from bottom of the pan. If you are able to turn your frittata over, awesome! However, you may need to slide it on a plate, then flip back in the pan to complete cooking. However, for those who like a soft and runny egg, serve runny side up!
